2 pounds chicken wings,
Lime wash: juice of 2 limes and 2-3 cups water
Rinse the wings and pat dry with paper towels. Season the chicken with the jerk spices, ensuring all wings are fully coated.
2-3 tablespoons jerk seasoning
Next, add the jerk seasoning paste and coat all of the wings. Allow to marinate for at least 30 minutes in the fridge.
2-3 tablespoons Walkerswood Traditional Jamaican Jerk Seasoning paste
Add allspice berries and wood chips to your electric smoker and preheat it to 225 degrees F.
½ cup allspice berries,
1 ½-2 cups Apple or cherry wood chips
After the wings have marinated, place them on the smoker rack. Close the smoker and cook for 2 hours or until they reach at least 165 degrees F.

Notes
Use allspice berries in the smoker for authentic jerk aroma (sub for pimento wood).
Marinate at least 30 minutes—longer = more flavor.
Pat wings dry before seasoning for crispier skin.
Apple or cherry wood keeps the smoke mild and sweet.
